  • 400 g boiled cauliflower florets
  • 400 g boiled potatoes
  • 1 egg
  • 100 g taleggio cheese, cubed
  • 50 g grated Parmesan cheese
  • 50 g breadcrumbs
  • 2 teaspoons Cannamela turmeric
  • salt
  • 3 beaten eggs

Mash the potatoes in a potato masher. Add the cauliflower to the potatoes, mashing with a fork until combined.

Add the egg, grated Parmesan cheese and breadcrumbs. Flavour with Cannamela turmeric and season with salt. Stir to mix the ingredients.

Shape into balls weighing about 35 g each, open them slightly in the middle, place a cube of Taleggio inside, close them and dip them in the beaten eggs, and then in some breadcrumbs. Repeat the crumbing process (eggs and breadcrumbs).

Place the potato balls on a baking tray lined with baking paper, brush lightly with oil and bake at 200° for 15-17 mins. Remove from the oven, salt lightly if desired and serve with mixed salad.
