Ingredients

  • 100 g sugar
  • 430 g all-purpose flower
  • 130 g mixed-flower honey
  • 3 eggs
  • 1/2 lemon
  • 1/2 vanilla pod
  • 2 teaspoons CANNAMELA ground ginger
  • 1 teaspoon CANNAMELA ground cinnamon
  • 2 CANNAMELA cloves
  • 5 g bicarbonate
  • 200 g sifted icing sugar
  • 20 g egg whites
  • 20 g lemon juice
  • red and green food colourings

Mix the flour and sugar together. Flavour with the grated lemon peel and the seeds scraped from the vanilla pod.

Flavour with the CANNAMELA ground cinnamon, CANNAMELA ground ginger and the CANNAMELA cloves, ground previously.

Add the baking soda and mix the ingredients with the honey and eggs until an even doughis obtained.

Roll out the dough to 3-4 mm thickness and cut out the gingerbread men with a pastry cutter.

Place the biscuits on trays protected with baking paper.

Bake at 180° for 8 minutes. Remove from the oven and cool on a wire rack.

Icing: Beat the icing sugar with the lemon juice and egg white. Place 3 tablespoons of icing in a cone and cover the remainder with cling film. With the white icing, draw the faces and the edges.

Take a generous spoonful of white icing and colour it red. Transfer the red icing into a cone and draw the bow ties. Colour the remaining icing green and draw the buttons (if the icing is too liquid, thicken with a little icing sugar). Allow the biscuits to dry for 30-40 min before removing them.
